In a blender, pour the salt then cover with flour, place the sugar, eggs and yeast diluted in a little warm water. Mix on speed 1 for 3 minutes. Accelerate to speed 2 until your mixture is smooth and even (about 10 to 15 minutes). Add the soft butter and lemon zest and knead until the brioche dough comes away from the sides of the bowl.
Place in a dry place at room temperature, cover with a cloth and let the dough double in volume (1h to 1h30). Lightly knead the dough to remove air and shape half of your dough into small round balls. Place a teaspoon of black nougat cream in the centre of each ball and weld well.
If you want to have a nice "mushroom" effect as in the picture, mould the briochettes in small ramekins and let them grow for 1 hour, always at room temperature.
5 minutes before the end of the growth time, preheat the oven to 180°C. Brown with egg and bake for 20 minutes (adapt the cooking according to the size of your balls). Let cool and enjoy!
